I love this recipe and so does my family! It was posted by Generation Healthy on Facebook and it couldn't be easier! This recipe makes a 9x9 pan of energy bars that can then be cut into bars, or in my case, I cut them into squares! Don't be intimated by the long list of ingredients! Assembly is super fast! Once these are set, I cut them and put them into a storage back and keep in the freezer.
Ingredients:
Healthy Energy Bars
Makes one 9x9 pan
1 ripe banana, mashed
1 1/2 cups quick cooking oats
1/2 cup unsweetened shredded coconut
1/4 cup coconut oil
1/2 cup maple syrup
1/2 cup peanut butter
1 tablespoon fiber
2 tablespoons cinnamon
1/2 cup protein powder
1/2 cup raisins
1/2 cup mini chocolate chips
1 teaspoon vanilla
2 tablespoons ground flax seed
2 tablespoons sesame seeds
Combine the banana, quick cooking oats, shredded coconut, coconut oil, maple syrup and peanut butter in a large bowl. Once combined, add the fiber, cinnamon, protein powder, raisins, mini chocolate chips, vanilla, ground flax seed, and sesame seeds. Mix well.
Press mixture into a 9x9 pan and place in the freezer for 2 hours before cutting. Cut into squares or bars, store in the freezer in a storage bag.
