Orange-Vanilla French Toast with Strawberry Sauce

I decided to change up my usual french toast by adding a strawberry sauce!  Once made, I let it cool and put it into a squeeze bottle so that it would be easier to add to the food.  I made more than needed, but figured we could serve it over ice cream too!


Orange-Vanilla French Toast with Strawberry Sauce
Serves 4

8 slices bread (I used multi-grain)
4 eggs
1/2 cup milk
1/2 cup orange juice
1 teaspoon vanilla
Butter flavored non-stick spray
Cinnamon

In a large bowl, add the eggs, milk, orange juice, and vanilla.  Whisk until combined.  Pour into a shallow dish (like a glass pie pan).   Heat a large pan over medium-high heat and add some butter spray.  Instead of the butter spray, you could add a small amount of butter to the pan, let it melt, and swirl it around before cooking the french toast.  Soak each piece of bread in the egg mixture then add to the pan, sprinkle with some cinnamon.  Flip french toast after a few minutes and cook until done.  Add more butter or spray in between each batch of french toast.  Keep warm on a plate in the oven while you make the rest.

Strawberry Sauce
Makes about 2 cups

1 pint strawberries
1/2 cup sugar
1 teaspoon vanilla
1 teaspoon cinnamon

Remove the stems from the strawberries and rough chop.  To a sauce pan over medium-high heat, add strawberries, sugar, vanilla, and cinnamon.  Cook, stirring with a wooden spoon, for about 5 minutes.  Let cool.  Move into a storage container and keep refrigerated.
