With the warmer weather approaching, I decided to grill some chicken breasts and make a fruit-based salsa as an accompaniment. It turned out great! Very simple to make and was a delicious addition to our meal!
Mango, Papaya, and Watermelon Salsa
Serves 4
2 mangos, peeled and diced
2 papayas, peeled and diced
1/2 cup cucumber, diced
1/4 cup red onion, diced
1/2 cup watermelon, diced
juice of one lime
2 cloves garlic, minced
2 tablespoons cilantro, chopped
1 tablespoon jalapeno, diced
2 teaspoons minced ginger
2 tablespoons olive oil
salt and pepper to taste
Combine all ingredients, cover, and refrigerate for at least 2 hours before serving.
