Roasted Garlic Blue Cheese Filet

I LOVE LOVE LOVE Blue Cheese Filet – don’t know what this is?  Most restaurants prepare it differently – but my favorite establishment at which to order it is The Keg Steakhouse.  There is something about the way they prepare it makes it amazing. 

Last week, I decided to try to make this recipe myself.  Next time, I will use a food processor to finely chop the ingredients (with the exception of the garlic cloves), but was without one at the time of making this so decided to make do with a good ole knife and cutting board!  You’ll want to roast the garlic ahead of time and store until ready to use. 

Oh, and p.s. - it's even better with a crab leg on the side :)



Roasted Garlic Blue Cheese Filet
Topping for 4 filets

½ cup bread crumbs (I diced multigrain ciabatta bread)
2 tablespoons butter, diced
4 cloves of roasted garlic, chopped
½ cup blue cheese crumbles

Add above ingredients in a bowl and mix well.  Alternatively, place in food processor and pulse to combine. 

Season your filets with salt and pepper and grill until almost cooked to your preference.  Just before serving, top the filet with some of the blue cheese mixture.  Close the grill and allow topping to melt.  Serve immediately.
