Guacamole with Grapes!

Several years ago, the hubby suggested that we start adding grapes to the guacamole - so I did!  I've seen it in lots of recipes too - as well as other fruits like pomegranate seeds, pears, peaches - it's awesome!  I sometimes also add garlic to my guacamole, it's another dish I do differently every time!  I always serve with Tostitos Multigrain Tortilla Chips - I love these chips!!!  Experiment with the recipe below, add more or less of any of the ingredients, do you have a unique addition to your guacamole?  Do tell!



Guacamole with Grapes
Makes about 2 cups

Ingredients:



2 pounds avocado, halved, seeded, and peeled
1 cups grapes (I use green, can use any kind) - quartered
1 cup yellow onion, diced (more is OK if you like onion!)
2-3 small tomatoes, seeded and diced
3 tablespoons cilantro, chopped
1 tablespoon jalapeno, diced (or more if you are willing!) REMEMBER: wear gloves!
Juice of one lime
Salt & Pepper to taste

If you want to make ahead of time, combine the grapes, onion, tomatoes, cilantro, and jalapeno in a large bowl, cover and chill until ready to finish.  Once ready, mash the avocados in a bowl and combine with the other ingredients.  Add the lime juice and salt/pepper.

Add the avocados to a bowl and cut up/mash with the back of a spoon, until it is a good, guacamole consistency.  Add grapes, onion, tomatoes, cilantro, jalapeno, lime juice, and salt/pepper. 

If you need to store before serving, be sure to cover completely with plastic wrap (push the plastic wrap down onto the guacamole so there is no air between the guacamole and the plastic wrap) and chill.
