Green Olive Bruschetta

Olives.  People either love 'em or despise 'em.  I am one who LOVES them!  I found the idea for this recipe several years ago in a Pampered Chef cookbook and have adapted it over time.  It's super easy and delicious for the olive loving community.


Green Olive Bruschetta
Makes about 30

1 baguette, sliced
8 oz tub of chive and onion cream cheese
2 cups green olives
3 garlic cloves, roughly chopped
1 teaspoon oregano
Pepper, to taste
Parmesan cheese, grated
Olive oil

Preheat oven to 375.  Spread out the sliced baguette onto a cookie sheet and drizzle with olive oil.  Bake for about 10 minutes, remove from oven and let cool.  In a food processor, combine the olives and garlic.  Pulse until chopped.  Stir in the oregano and pepper. 

On each slice of baguette, spread some cream cheese, top with the olive mixture, and sprinkle with some grated Parmesan cheese.  Serve!
